I purchased Altair's Armor and Robes from the Uplay program. Now I am unable to take them off. I am currently wearing Altair's Armor and my only options are to either put on Ezio's civilian clothes or Altair's Robes.

So DON'T change it through your full collection, you change it by clicking the prompt from the inventory overview menu that shows you all the stuff you're currently wearing. I collected every assassin's seal for Altair's armor, however one of the statues doesn't have the seal in it, even though I already put it in a while ago. It just appears as if I never touched it, and I would have thought I simply forgot the seal, if not for the fact that I can't even examine it.

For armor at high levels (50+) that's the way it works out, yes. The set bonus isn't as good as just having 1 more stat on all 5 items. Below level 50 though the set bonus stays the same strength but the stats you are missing out on get weaker and weaker the lower your level so sets make sense for that level range.
